Why It Matters
Home to fields by René Mathieu, one of Europe's leading plant-based fine dining restaurants, holder of both a Michelin Star and a Michelin Green Star for sustainable gastronomy. Mathieu's 100% plant-based, gluten-free menus — sourced entirely from Luxembourg small growers — have earned him We're Smart World 'Untouchables' status. The restaurant was also named Gault & Millau's Restaurant of the Year upon opening at this location in January 2025.
A former Grand Ducal hunting lodge converted to a hotel in 1947, Airfield Living is a seven-room boutique property in Findel, a short walk from Luxembourg Airport. Owners Sandra and Selim Schiltz-Neuman acquired it in 2015 and pushed it through two years of renovation, emerging in 2017 with an industrial-modern aesthetic that sits surprisingly well against the building's historic bones. The rooms are the supporting act. Chef René Mathieu's restaurant — now called fields — is the reason people actually book here.
