Why It Matters
Michelin-listed, SLH member, and Forbes-mentioned, Andronis Minois was substantially renovated in 2023. Thirteen of its 44 suites have private pools. The Aura Spa runs on ESPA and FEDUA products with a proper hammam. Head Chef Anastasios Tsantilas trained under a Japanese sushi master before returning to Greek cuisine — the cooking at Olvo reflects that range. Andronis Minois is a 44-suite boutique hotel on the quieter west coast of Paros, perched above Parasporos bay. The architecture is classic Cycladic — white cubic forms, terracotta accents, bursts of teal — but the interiors read modern and calm. It's the Andronis group's Paros foothold: less dramatic than their Santorini cliff properties, but more grounded. You get a sea-water infinity pool, a genuinely good tiered-terrace restaurant (Olvo), and a subterranean ESPA spa. Parasporos beach is a 4-minute walk.
