Why It Matters
One of France's rare Relais & Châteaux properties where the chef is also the owner — Mathieu Guibert trained under Yannick Alléno, Christian Le Squer and Philippe Mille before coming home to earn two Michelin stars. The hotel itself received a Michelin Key in 2024. The wine list was named best in France in the prestige gastronomic category by Terre de Vins in 2023.
A big, airy, contemporary villa planted right on the dunes above the port of La Gravette — this is a hotel that looks like it wandered in from Big Sur, all clean lines, generous spaces, and floor-to-ceiling windows framing an endlessly shifting Atlantic. The rooms and restaurant share that same sense of purposeful calm: simple palettes, modernist furniture, nothing cluttered. But the real reason people make the drive from Nantes (about 45 minutes) is chef-owner Mathieu Guibert's two-Michelin-star table on the ground floor. He grew up in this region and it shows on every plate.
