Why It Matters
One of France's most-talked-about Two-Michelin-Star restaurants housed in a genuine working auberge. Fanny Rey and Jonathan Wahid — she the savory visionary, he the dessert master and former French Dessert Champion — both worked at the Ritz Paris and Oustau de Baumanière before building this place from scratch. The second star arrived in 2025, and Fanny was simultaneously awarded the Legion of Honour. Staying here means you eat dinner steps from your room, and breakfast the next morning is made by the same kitchen.
A 10-room inn in a stone building dating back to 1690 on the old ramparts of Saint-Rémy-de-Provence, owned and run by chef couple Fanny Rey and pastry chef Jonathan Wahid since 2012. The hotel is thoroughly secondary to the food — this is first and foremost the address of a two-Michelin-star restaurant, where the rooms let you sleep off an extraordinary meal without going anywhere. Fanny earned the first star in 2017 and the second in 2025, the same year she was awarded the Legion of Honour.

Cooking classes are offered as part of the Mas de Garance villa experience. Groups booking the affiliated Provençal farmhouse can arrange chef-led cooking classes as part of their stay package.
The Regional Natural Park of the Alpilles begins right on the hotel's doorstep. Marked trails for hiking and cycling run through the limestone ridges and dry valleys surrounding Saint-Rémy. The hotel team can advise on routes.
The renowned Wednesday morning market sets up directly across the street from the hotel on the boulevard. Local producers, cheeses, olives, lavender, and Provençal goods fill the street every week.
The psychiatric asylum where Vincent van Gogh was a self-admitted patient from 1889–1890 and painted some of his most famous works is about 2 km from the hotel.

Rooms are on the first or second floor, accessible by stairs only. The property cannot accommodate guests with reduced mobility.
A central courtyard with a fountain and art installation is the social heart of the property — used for ADN bar and table dining, breakfast, and evening aperitifs.
No on-site car park. A free public parking area is available behind the hotel within a short walk. Luggage drop-off only at the front of the property.
There is no swimming pool at the main inn on Boulevard Mirabeau. The affiliated Mas de Garance villa rental has a pool.
