The original Bebek Hotel dates to the 1950s and became a legendary haunt for writers and artists in the 1980s. The Stay Collection took over in 2019, brought in architect Mahmut Anlar, and turned the place into 22 all-suite rooms packed with curvaceous Art Deco furniture, custom neon underlighting, and a rotating collection of Turkish art. The result is one of Istanbul's most stylishly idiosyncratic small hotels — and it now hosts Turkey's first Michelin-starred Japanese omakase restaurant.
