Why It Matters
One of the few places in the Valle d'Itria where you actually sleep inside a trullo — not just next to one. The 42-trullo estate is a rare intact example of rural Puglia, painstakingly restored by specialist 'trullari' craftsmen. The Michelin Guide picked it up for good reason.
Borgo Canonica is a lovingly restored 1800s rural hamlet in the Valle d'Itria, sitting on 6 hectares of macchia scrubland and ancient olive trees. Forty-two trulli — those iconic stone-conical structures unique to this corner of Puglia — were brought back to life after 60 years of abandonment, creating 15 guest suites that feel genuinely rooted in place. Stone walls, whitewashed interiors, and the faint whistle of cicadas: it's the real Puglia, without the performance.

Staff can arrange visits to the Castellana Caves (35km), one of Italy's most spectacular underground cave systems — a 3km guided route through stalactites, stalagmites, and the famous Grotta Bianca (white cave).
