Why It Matters
One of the Basque Coast's most beloved family-run addresses — the Ibarboure family has held a Michelin star for over 25 years. Father Martin and son David run the kitchen; daughter Camille curates the wine list; Marie-Claude runs the floor. David trained under Pierre Gagnaire in London and Hong Kong before coming home. The result is cooking that tastes unmistakably local but thinks internationally.
Maison Briketenia is a 14-room, 4-star boutique hotel and one-Michelin-star restaurant in Guéthary, a small surf-and-pelota village on the Basque Coast between Saint-Jean-de-Luz and Biarritz. The Ibarboure family has run the place since 1952 — Michel and Jeanne started it as a food shop, and successive generations have turned it into one of the most personal addresses on the Côte Basque. The name references an old stone quarry on the site. There's no pool and no spa. What there is: excellent food, genuine warmth, free parking, and views of La Rhune from the restaurant terrace.

The GR coastal path (Sentier du Littoral) runs through Guéthary connecting Bidart to Hendaye via criques, cliffs and sand. The hotel recommends walks between Bidart, Guéthary, and Saint-Jean-de-Luz.
