Listed on both Michelin Guide and Tablet Hotels. Perched inside actual 13th-century Cathar castle walls with unobstructed panoramic views of the Pyrénées and the Montagne Noire from the terrace. Restaurant is independently Michelin-referenced for modern cuisine using hyperlocal produce (e.g., Puylaurens-raised veal). This corner of Occitanie is called 'la petite Toscane' — you'll see why immediately from the terrace.

Three buildings from different centuries sit inside the fortified walls of a 13th-century Cathar castle crowning the medieval town of Puylaurens. The oldest structure dates to 1258; the 18th-century distillery (Maison Cocagne) now houses the restaurant and five rooms; a 16th-century manor (Maison Lauragais) holds six more. Together, they form a hotel with the feel of a private home, the services of a proper hotel, and the bones of a small château.
