Three buildings from different centuries sit inside the fortified walls of a 13th-century Cathar castle crowning the medieval town of Puylaurens. The oldest structure dates to 1258; the 18th-century distillery (Maison Cocagne) now houses the restaurant and five rooms; a 16th-century manor (Maison Lauragais) holds six more.
