Why It Matters

The building spans over 2,000 years of layered history in a single structure. Restaurant Xanglot, helmed by chef Sandra Jorge, is recognized by the Michelin Guide and distinguished with a Repsol Sun. No two rooms share the same floor plan or historical artifacts.

A 14th-century Gothic palace in Valencia's Old Town that holds the rare distinction of being Spain's only designated historical monument hotel. The building layers two thousand years of history — a 2nd-century Roman mosaic, the original 12th-century Arabic city wall, and Gothic arches — all set against Francesc Rifé's deliberately sparse, monochrome interior design.
