Château de Saulon
Country-house château with three distinct personalities: Louis Philippe reds and brocades in the main castle; rustic-luxe Jura marble and old oak in the converted stables (La Longère); contemporary polish in the Pavilion. Think elevated French countryside rather than stiff formal hotel.
Longère rooms are the pick for nature lovers — all have private terraces facing the forest, and the bathrooms have both shower and bathtub
Why It Matters
Rare combination of genuine 15th-century heritage, a serious Rinck-designed restoration, and a bistronomic restaurant that actually uses produce from the on-site kitchen garden. Listed on Tablet Hotels. Sitting midway between Dijon and Beaune makes it a natural wine-route base.
A proper château-hotel with serious Burgundian bones. Originally built in 1460 for a lawyer to the French king, the estate passed through aristocratic hands, survived the Revolution, and was thoroughly restored in 2018–2019 by Parisian interior design firm Rinck. The result is 42 rooms spread across three distinct buildings on 27 hectares of parkland, 20 minutes from Dijon and right on the doorstep of the Route des Grands Crus. Two rivers run through the property. So does a working kitchen garden that supplies the restaurant.
