Why It Matters
Part of the MDCV (Domaines de Provence) group, a certified organic estate since 2021. Named after its distinctive iron-rich red soil. The chef's daily menu is entirely dictated by the kitchen garden harvest — not a marketing line, it genuinely changes every day. 98% of grapes are harvested by hand, at night. The sourdough starter for the estate bakery is made from the estate's own grapes.
A working farm since the 15th century, Château Saint-Roux sits on 40 hectares of certified organic Côtes de Provence vineyard in the Plaine des Maures Natura 2000 nature reserve. The whole estate was meticulously restored in 2018 using local stone and materials — terracotta floors, exposed beams, Provençal country furniture — and now functions as an eco-lodging property with serious credentials: its own winemaking, a goat cheese dairy, a wood-fired bakery (the only one of its kind in the region), a 4-hectare kitchen garden with 90+ vegetable varieties and 200+ fruit trees, and a chef who rewrites the menu every single day based on what was just harvested. This is as close to genuine slow-living as you'll find in Provence.

An outdoor wooden playground adjacent to La Table de Saint-Roux's terrace, with a perched hut, climbing nets, and a balancing course. Designed for a natural, free-range experience in the estate grounds.
A free, self-guided signposted trail through the animal park where goats, hens, roosters, donkeys (including Idaho, the miniature donkey), and rabbits live. Educational workshops available for young and old. The goat herd also produces cheeses that can be tasted on-site.
The estate's kitchen garden covers nearly 4 hectares and grows close to 90 varieties of vegetables and over 200 fruit trees. It supplies La Table de Saint-Roux and the wider MDCV group restaurants. Baskets of seasonal produce are also available for purchase.
Hands-on baking session with Head Baker Géraud Fleuri. After a brief intro, you make your own baguettes using the estate's grape-based sourdough and bake them in the wood-fired oven — the only one of its kind in the region. Duration 1h30. Groups of 4–12 people. Includes a tote bag and coffee break. Not suitable for children due to oven safety.
The estate sits inside the Plaine des Maures Natura 2000 nature reserve, with marked trails directly accessible from the property. The reserve is home to the protected Hermann tortoise, orchids, cork oaks, and umbrella pines. Trails lead toward Vallons des Escarets and the Ronde des Escarcets routes.
Curated tasting combining estate wines with cheeses from master cheesemaker Tristan Joly of the Fromagerie de Lorgues. An immersive session covering the grape varieties of the Côtes de Provence appellation including some unusual ones: mourvèdre gris and blanc, touriga nacional, calabrese, mavrud.
Guided tour of the 40-hectare organic vineyard followed by a tasting session. Options range from a simple commented tasting of estate wines to a full wine-and-lunch experience. The cellar stocks all five organic wines (Côtes de Provence AOP and IGP Maures) in red, white, and rosé. Winalist-listed prices run from €19 to €93 depending on the experience.
