Cliff House Hotel is a 39-room, five-star boutique hotel built into the cliffs above Ardmore Bay in County Waterford, where it seems to defy gravity. The building opened in 2008 and the design is deliberately Irish-modern: white walls, cupa stone columns, sedum moss-covered roofs and limestone terracing. Every single room faces the sea. The House Restaurant has held a Michelin star for 15 consecutive years, which is an extraordinary run for a hotel on Ireland's south coast.

Nine rooms on the upper floors with large floor-to-ceiling windows overlooking the rolling waves of Ardmore Bay. A wingback armchair and footstool upholstered in Donegal tweed sits by the window — the spot for watching ships or the occasional whale.
