Clos Vauban is an intimate 8-room Relais & Châteaux property set inside a 19th-century Haussmann mansion perched on the ancient ramparts of Langres — the birthplace of Diderot and home to the largest remaining fortified city in Europe. It is the project of Laurent and Martine Petit, the couple behind the three-Michelin-star Clos des Sens in Annecy, who handed daily operations to young chef Valentin Loison and sommelier Anaïs Bercegeay. The food is the main event: Bulle d'Osier holds 2 Michelin stars and a Green Star, and Mirabelle holds a Bib Gourmand.
