Copal Tree Lodge is a 3,000-acre certified organic farm, Michelin Key-awarded eco-resort, and working rum distillery all rolled into one — set between 16,000 acres of Belize rainforest and the Caribbean coast in the remote Toledo District. Sixteen suites and a three-bedroom villa fan out across the property, each with floor-to-ceiling jungle views and a private veranda. The food program is genuinely extraordinary: the chef gathers his own conch for ceviche, spears lionfish, and the lodge employs a resident forager who sometimes spends days in the jungle hunting down a single ingredient.
