Domaine de Rymska
Cosy French countryside estate. Stone walls, exposed beams, open fireplaces, Burgundy stone bathrooms, and Bolon textile flooring. Intimate and personal rather than grand. The farm-to-fork identity runs through absolutely everything here.
Ask reception to arrange a stud farm visit — the horses are the estate's whole identity and you won't find this at many hotels
Why It Matters
Named after a champion thoroughbred filly, Rymska, born on the estate in 2014. Co-created by owner Eric Feurtet and Raphaël Meyer, the property is unique in that its working farm — Wagyu beef, Mangalitza pigs, poultry, lamb, goats — supplies the kitchen directly. The restaurant carries a Michelin plate with 16/20 recognition and menus ranging from €39.50 to €132. The spa won 1st Prize in the Massage Competition at Beauté Sélection Lyon 2021.
An 80-hectare working estate planted in the rolling hills of Burgundy's Couchois region, 30km south of Beaune. The property is the real deal: a functioning farm with Wagyu and Charolais cattle, a thoroughbred stud farm, vegetable gardens, orchards, and seven ponds — all feeding directly into the kitchen. The 13-room, 5-star hotel and Relais & Châteaux member (since 2020) holds 1 Michelin Key, awarded for two consecutive years, and every room is named after a prize-winning animal from the estate.
