Why It Matters
A brand-new property (opened October 2024) on a working oyster port inside a Natura 2000 zone — selected by Michelin Guide, Teritoria, and Romantik Hotels almost immediately. The bistronomic restaurant uses an anti-waste kitchen, buys from local fishermen and producers, and pulls oysters straight from the water next door (September to April). The entire villa can be privatized for groups.
Domaine Les Clayères sits right on the port of La Guittière — the smallest oyster port in the Vendée — 12 kilometers south of Les Sables-d'Olonne. Seven individually styled rooms and suites look out over oyster beds, tidal ponds, and coastal forest in a Natura 2000-classified environment. The place opened in October 2024 as the rehabilitation of the old Hôtel des Parcs, which had been derelict for six years. Chef Sylvain Bourmaud runs a genuinely local bistronomic restaurant; the pool and jacuzzi are seasonal (May to September). This is a deliberate slow-down destination where the rhythm follows the tides.

Electric bikes available for hire directly at the domaine. The surrounding area is ideal for cycling: the Vélodyssée cycling route passes nearby, and the Guittière port and coastal marshes are best explored on two wheels.
Marked hiking trails run through the coastal marshes of Talmont-Saint-Hilaire directly from the property. The estuary, tidal ponds, and Natura 2000-classified landscape make for extraordinary birdwatching and nature walks in all seasons.
Paddle Aventure operates kayak and stand-up paddle excursions on the Payré Estuary — guided or self-guided, accessible to all levels. Hotel guests receive a discounted rate. The estuary is part of a Natura 2000 site, meaning the wildlife and scenery are exceptional.
Seasonal outdoor pool and jacuzzi available to all guests, open May through September. Positioned within the domaine grounds with views toward the estuary and marsh.
Yoga sessions offered at the domaine through local instructor Clémence Aubier. Sessions take place in a quiet, restorative setting on the property. Booking done directly through the instructor's website.
The oyster farmers of La Guittière port are right next door. Guided visits to the oyster parks and tastings of fresh oysters directly from the water — a genuinely rare experience at a working farm. Available September through April. Reservations made directly with the farmers; the hotel helps with arrangements.
The Veillon beach is a short drive from the domaine. Popular for swimming and water sports including surfing, paddle, kitesurf, and kayak in summer.
