Why It Matters
One of the more genuinely original hotel conversions in southern France. The owners are architects who lived in the building, and it shows — every design decision is deliberate. La Coopérative holds both a Michelin red star and a Michelin green star (for sustainability). The pool is filtered by aquatic plants. The wine comes from their own biodynamic vines. This is not a hotel that just talks about eco credentials.
A former 1925 village wine cooperative, dead for years before architect couple Karin Pühringer and Luc Richard fell in love with the wreck and rebuilt it into a 4-star ecolodge. The 18 rooms are literally carved out of the old concrete wine vats — each one is 12 sqm of tank turned into somewhere you actually want to sleep. Add a Michelin-starred restaurant, a plant-filtered natural swimming pool, a working 12-hectare organic vineyard, and a spa, and you start to understand why people drive 25km out of Perpignan for this place.

These are the wine-vat rooms proper. A single converted tank — 12m² of original concrete reimagined with slate floors, vivid walls, exotic textiles, and a bath. Compact, but done with intent. Views look onto the village or the vineyard.

Same wine-vat concept as the standard Comfort Room, but with a private terrace or balcony. The architect's take: one vat becomes the sleeping space, another becomes the bath. The terrace opens directly onto views of the garrigue or Bélesta.

Four character cottages set within the actual medieval walls of the Château de Bélesta, a short walk from the main hotel. 2.5 hours driving through the vineyards and surrounding landscape in a Land Rover. Ends with a charcuterie/cheese board and half bottle of Riberach wine at the Comptoir-Cave. Max 8 passengers per vehicle. Accessible to children (no tasting for kids). Available year-round.
