A former 18th-century bourgeois country house — known locally as a 'folie' — converted in 2018 into a 15-room boutique hotel by the Tarbouriech family, one of the Languedoc's most celebrated oyster-farming dynasties. The estate sits between Picpoul vineyards and the Thau Lagoon opposite Sète, and oysters run through everything here: the two restaurants, the Les Nacres bar, and a spa that has literally built its treatment protocols around oyster shells and mother-of-pearl. The 25-metre heated outdoor pool, lush Mediterranean gardens, and biodynamic kitchen garden round out a property that is genuinely harder to leave than to find.

Bikes available for exploring the surrounding vineyards, the Canal du Midi (UNESCO World Heritage Site) and the Bagnas nature reserve. The domaine is certified Accueil Vélo (cycle-friendly).
The estate's kitchen garden is farmed biodynamically using the lunar calendar. Guests can see how produce is grown for the restaurant — herbs, vegetables, fruits — and learn about the circular economy philosophy of the Tarbouriech family.
Available to non-resident guests. Pool access from 12:00–18:00 with a deckchair, a welcome drink at the Pool House, and a €40 restaurant credit. Adults only, no pets in pool area. Costs €85 per person.
Visits to the Tarbouriech family's experimental 'MadLab' — an eco-innovation space focused on recovering and transforming natural and industrial waste from the lagoon. Workshops for adults and children.
Depart from the tasting counter pontoon for an hour-long tour of the Thau Lagoon on a traditional oyster-farming barge. See the patented Solar Tide farming method up close — the solar and wind-powered rope-lifting system that gives Tarbouriech oysters their distinctive pink tinge. Available July and August.
Learn to taste and identify Tarbouriech special oysters, understand the different varieties (Spéciales, Seven, Réserve), and pair them with local wines. Run by the domaine's expert team.
