Why It Matters
Michelin-recognized and the most remote of the three Eastwind properties, with direct trail access right from the property entrance. Dandelion restaurant — run by co-founder and Brooklyn restaurant veteran Dan Cipriani — operates a genuine forage-to-fork program, not just a buzzword. The all-season heated pool steaming against a mountain backdrop in winter is its own kind of memorable.
The third Eastwind property opened in January 2023 and it's the brand's first ground-up build — an empty lot turned into a 26-room boutique hotel set between three 3,000-foot Catskill peaks with Esopus Creek running alongside. Rooms split between a Scandinavian-styled lodge and signature triangular Lushna cabins perched on the hillside. No cell service, no TVs, and a genuinely good on-site restaurant means there's not much reason to leave.
