Breakfast requires a reservation — book it ahead even if you are a hotel guest, and arrive hungry (allow 90 minutes)

Why It Matters

Salamanca's first and only 5-star Gran Lujo hotel, and its most serious gastronomic address. The restaurant Pascua features in the Michelin Guide 2026 and won Best Newcomer Wine List. The breakfast was a Madrid Fusión 2025 finalist for Best Breakfast. The building itself has historical ties to the old Salamanca bullring — said to have been its stables.

Eunice Hotel Gastronómico is chef José Manuel Pascua's personal tribute to his late grandmother, Eunice Fortes, whose kitchen instincts and hospitality shaped everything he does. The building is a sober 19th-century Castilian palace sharing a wall with the Monterrey Palace — one of the finest Renaissance buildings in Spain — and the interior design by local studio Idi evokes a proper Salamantine townhouse rather than a generic luxury hotel. Thirteen rooms only, two dining spaces, a curated art collection, and a breakfast that was nominated finalist at Madrid Fusión 2025. Look, this place is more restaurant-with-rooms than hotel-with-restaurant, and that is the point.
