The Spence restaurant — the old grand banking hall — is open to the public and has become a genuine Edinburgh dining destination in its own right. Gleneagles Townhouse is the famous Perthshire country estate's first and only city outpost — a 33-room luxury hotel, all-day restaurant, rooftop bar, and private members' club occupying a painstakingly restored Georgian sandstone mansion at 39 St Andrew Square. The building started life in 1781 as the home of the 8th Earl of Dalhousie before serving as a Bank of Scotland branch for over 200 years. Ennismore gutted and restored it with serious ambition: original gilded staircases, ornate six-metre ceilings and Corinthian-columned façade all intact, while the old bank vaults now house a cryotherapy chamber and infrared sauna.

Monthly Sunday brunch (last Sunday of the month) in The Spence. Unlimited starters, seasonal mains from the kitchen, live music, and an indulgent dessert room. A Bloody Mary or Mimosa on arrival. Reservations open on the 1st of each month at 10am — they go fast.
