A 17th-century palais right in the center of Saint-Rémy-de-Provence, converted into nine seriously spacious suites by owner Ralph Hüsgen and architect Margot Stängle. They took 24 original rooms and made nine. The result is high ceilings, original sandstone, and ClassiCon furniture by Eileen Gray and Konstantin Grcic — old bones dressed in midcentury clothes. The Michelin-starred La Table de Tourrel is the headline act, but the rooftop pool with views over the Alpilles makes a strong case for spending the afternoon doing absolutely nothing.

Book one of 14 seats at the Michelin-starred chef's table. Chef Thomas Cavasin's menu tells the story of the local terroir — sourcing from a named fisherman in Camargue, local farmers, and the hotel's own vegetable garden.
When the wine shop closes for the day, the cellar can be privatized for intimate dinners for up to 12 guests, paired with the full 1,400-label wine list. Contact the hotel directly to arrange.
The wine shop carries 1,400 labels from across Europe, with a focus on southern France, the Rhône Valley, and Burgundy. Some rare organic references are available only with a dinner booking. Staff can guide selections.
The heated rooftop pool with sun loungers is the spot on a Provençal afternoon. Views extend over Saint-Rémy's terracotta rooftops to the Alpilles ridge. Seasonal — available April through October.
