Why It Matters

Christopher Columbus spent time at the monastery in 1487, lobbying support for his voyage to the Indies at the historic Valcuevo Conferences. The hotel has been a working agricultural estate for 700+ years and continues to produce its own wine, cheese, olive oil, and cured meats from its Organic Farm. One of the few hotels in Spain where the farm-to-table story is genuinely its own farm.

A 14th-century Dominican monastery on the banks of the Tormes River, now a 40-room wine resort about 10km outside Salamanca. The original stone walls and oak-beamed ceilings are intact, while newer villas sit separately with vineyard views and private terraces. Everything on the plate traces back to the hotel's own Organic Farm — Churra sheep cheese, Verata goat cheese, pata negra, extra virgin olive oil — all cooked through the lens of the Slow Food movement. The Wine & Olive Spa is built inside an 8th-century water mill, using grape and olive-based treatments in one of the most atmospheric settings you'll find at any Spanish hotel.

A 10-minute drive from the hotel, the Dehesa Zorita Organic Farm offers four-wheel rides across the estate, cheese tasting, and a country meal. Great for families. This is where all the hotel's meat, cheese, and olive oil actually comes from.

A Taste of Zorita (Wine & Rum Tasting)

A guided tasting of the estate's wines and its signature craft rum, held in the ancient cellar with a vaulted ceiling shaped like an inverted keel — a nod to Christopher Columbus's Three Caravels. Educational and relaxed. Sessions run in both English and Spanish.

Wine Cellar Tour (Marqués de la Concordia)

A guided tour of the estate's Crianza Winery — the medieval cellar with 1,366 oak barrels and its distinctive inverted-keel vaulted ceiling. Wine tasting included. Also the venue for the Winemaker's Table private dinner.

Harvest Festival

The hotel's signature annual celebration of the grape harvest. Guests participate in the full vendimia experience — seeing, touching, smelling, and tasting the wines and grapes at the peak of the season. One of the most popular events the hotel runs.

Private Cathedral Tour (Salamanca)

An exclusive private guided tour of the Cathedral of Salamanca, available only to Hacienda Zorita guests. Accesses areas not open to the general public. Salamanca is a UNESCO World Heritage Site.
