Why It Matters
Christopher Columbus spent time at the monastery in 1487, lobbying support for his voyage to the Indies at the historic Valcuevo Conferences. The hotel has been a working agricultural estate for 700+ years and continues to produce its own wine, cheese, olive oil, and cured meats from its Organic Farm. One of the few hotels in Spain where the farm-to-table story is genuinely its own farm.
A 14th-century Dominican monastery on the banks of the Tormes River, now a 40-room wine resort about 10km outside Salamanca. The original stone walls and oak-beamed ceilings are intact, while newer villas sit separately with vineyard views and private terraces. Everything on the plate traces back to the hotel's own Organic Farm — Churra sheep cheese, Verata goat cheese, pata negra, extra virgin olive oil — all cooked through the lens of the Slow Food movement. The Wine & Olive Spa is built inside an 8th-century water mill, using grape and olive-based treatments in one of the most atmospheric settings you'll find at any Spanish hotel.

The entry-level rooms, located in the historic Casa Grande building. All overlook the Tormes River. Each room has been individually decorated — no two are the same — with a mix of classical furnishings and modern comforts. Exposed stone and warm textiles set the tone. Good for couples who want the monastery atmosphere without paying for extra square footage.
Cámaras Deluxe
More space than the standard Cámaras, still within the Casa Grande building with Tormes River views. The timeless, warm decor is consistent throughout the Hacienda, though each room has its own character. Good upgrade for guests who want room to breathe without moving to a villa.
Cámaras Deluxe con Terraza
Same generous proportions as the Cámaras Deluxe, but with a private terrace overlooking the Tormes River. A strong choice for guests who want indoor-outdoor flow while staying in the original monastery building.
Signature Suites
The most private and emblematic rooms in the hotel. King-size bed with direct Tormes River views. A separate living room that converts into a second bedroom makes these viable for families. Two full bathrooms. All of the hotel's signature amenities included. The Christopher Columbus Suite (referenced in guest reviews) falls within this category.
KingVillas
The most modern accommodation on the estate, designed in a contemporary and minimal style that still references the 700-year-old monastery that inspired it. Private terrace with vineyard views. A notably different feel from the Casa Grande rooms — quieter, more private, better for guests who want outdoor space. Pets allowed (up to 12kg, €30/day supplement).
Villas Deluxe
Larger versions of the Villas, with the same contemporary-meets-monastery aesthetic and vineyard terrace views. Ideal for longer stays or guests who want the most private and spacious accommodation on the estate. Pets allowed up to 12kg with a €30/day supplement.

A 10-minute drive from the hotel, the Dehesa Zorita Organic Farm offers four-wheel rides across the estate, cheese tasting, and a country meal. Great for families. This is where all the hotel's meat, cheese, and olive oil actually comes from.
A guided tasting of the estate's wines and its signature craft rum, held in the ancient cellar with a vaulted ceiling shaped like an inverted keel — a nod to Christopher Columbus's Three Caravels. Educational and relaxed. Sessions run in both English and Spanish.
A guided tour of the estate's Crianza Winery — the medieval cellar with 1,366 oak barrels and its distinctive inverted-keel vaulted ceiling. Wine tasting included. Also the venue for the Winemaker's Table private dinner.
