Why It Matters

Japan's first sushi auberge in the Hokuriku region, Hitotsu Notojima sits on Notojima Island in Nanao Bay, Ishikawa Prefecture. Six rooms — named after local island districts — accommodate a maximum of ten guests at once. Every room faces the water, and the design blends tatami flooring and blonde wood with clean modern lines, landing somewhere between traditional Japanese inn and Scandinavian minimalism. The whole thing is all-inclusive: sushi omakase and a chef's breakfast are built into your stay, as are most beverages.

Two-story building with no elevator. Guests with mobility needs should request KUKI or NEYA (fewer stairs). Using the shared spa/sauna also requires navigating stairs.
