Arnaud and Cécilia Viel have run this 18-room hotel in the heart of Argentan for over two decades, and the place has their fingerprints all over it. Arnaud runs a Michelin-starred kitchen; Cécilia curates a genuinely excellent wine list. The lodging itself — contemporary decor in soft earth tones, a heated outdoor pool, and a proper spa in a converted stone outbuilding — is appealing enough on its own. But the restaurant is the real reason people make the detour.
