Why It Matters
Holder of a Michelin star continuously since the Da Silva era, the restaurant has been one of the Var's most celebrated addresses for decades. Chef Anthony Salliège now leads the kitchen, carrying forward that tradition with his own market-driven gastronomic menus. The combination of exceptional food, a 600-bottle wine cellar, and an infinity pool facing pink cliff faces is hard to find anywhere in inland Provence at this level.
A pink-stone Provencal farmhouse (bastide) sitting directly opposite the dramatic rose-colored Gorges de Pennafort, about 20 minutes inland from Saint-Tropez. Thirteen rooms, one Michelin star, and a Thalgo spa: small, calm, and genuinely elegant without any of the attitude. The restaurant is the main event here — many guests drive from the Côte d'Azur just for dinner.

Three Junior Suites in the hotel annex — the most spacious and romantic option on property. Each has its own balcony or terrace with views of the leafy gardens. Elegant and light-filled with contemporary décor in neutral tones. Ideal for a longer stay or a special occasion.
Lounge Room
Three Lounge Rooms located in the hotel's annex, each with a large open-plan space combining the bedroom and living area. Double or twin beds. All have a private balcony or terrace looking onto the Provencal gardens. One room is accessible for guests with reduced mobility.
Standard Room – Gorges View
On the second floor directly above the gastronomic restaurant. Five of the seven Standard rooms look out toward the gorges and hotel gardens. Parquet floors, antique furnishings, and contemporary fabrics. Compact but elegantly done. Air conditioning, flat-screen TV, minibar, and safe.
