Why It Matters
The hotel's underground thermal baths — built inside converted 19th-century wine tanks, each at a different water temperature — are alone worth a detour. Add chef Matteo Salas's regionally sourced share plates at Le Cercle, a wine bar that stocks three local Martigny reds, and the fact that you can reach Zermatt, Verbier, Chamonix, and Montreux within an hour, and Martigny starts to look like an underrated Alpine base rather than a transit point.
Opened in April 2025 on the site of 19th-century wine cellars, Hôtel Borsari is a 50-room boutique hotel in Martigny — a Swiss crossroads town between France and Italy that's been on Roman trade routes since antiquity. First-time hotelier John Cretton partnered with designer Shaun Evans (the two work as Drip & Drip) to transform this agro-industrial relic into something that feels genuinely original: a rusty-red brutalist-brick façade, floors colour-coded by natural element (dark green for foliage, red for grapes, basalt black for minerals, blue for spring water), and an underground thermal bath complex carved into the old wine tanks themselves. The analog ethos is deliberate — most rooms have no TV, no plastic keycard, and no soulless white tiles. Instead: oak floors, wool flannel curtains, vintage audio systems, and Vitsœ shelving by Dieter Rams.
