Why It Matters
One of the few genuinely family-owned 5-star resorts in Germany that hasn't sold out or been absorbed by a chain. Le Pavillon has held 2 Michelin stars without interruption since 2010. The Dollina spa complex — 5,000m², 5 pools, a mountain lake, 4 saunas, a hammam, and 17 treatment rooms — is legitimately one of the largest hotel spa operations in Germany. And the Relais & Châteaux membership sets the bar for the hospitality standard.
Hotel Dollenberg sits on a hill above Bad Peterstal-Griesbach, surrounded by 70,000m² of parkland with panoramic views across the Renchtal Valley. Built around a family story — founder Meinrad Schmiederer grew a small guesthouse into a 5-star superior resort — it remains genuinely family-run across three generations. His brother-in-law Martin Herrmann runs the kitchen, which has held 2 Michelin stars continuously since 2010. With 105 rooms, a 5,000m² spa (the Dollina, added in 2011 with 17 treatment rooms and its own mountain lake), and dining at several levels from rustic cabin to fine-dining institution, this is a full-commitment resort designed for week-long stays, not quick stopover nights.
