A Design Hotels member and World Luxury Hotel Awards 2025 winner, Hotel Liberty's entire concept hangs on its ironic identity as a former prison — right down to a fine-dining restaurant named Wasser & Brot (water and bread), the traditional prisoner's ration. The Wasser & Brot restaurant also took World Luxury Restaurant Award 2025 for Best Fine Dining Cuisine in Germany.
Hotel Liberty is a 38-room design hotel built inside a genuine 19th-century prison in Offenburg, just a short drive from the French border and the Black Forest. The building — designed in 1840 by architect Heinrich Hübsch from the same red sandstone used for the cathedrals of Freiburg and Strasbourg — closed as an active prison in 2009 and reopened as a hotel. Former cells were merged and transformed, the prison yard was spanned with a glass cube that now holds the restaurant and bar, and the original steel doors and thick masonry walls were left deliberately intact. It's a genuinely unusual place: dark, dramatic, and proud of its history.
