Hotel Marcon sits atop a volcanic plateau at 1,130 meters in the Massif Central — a genuinely remote destination you reach entirely on purpose. Opened in 2008 as part of the Marcon family's sprawling village operation, the four-star property is built into the hillside itself: ten underground rooms (nine at 50m², one suite at 95m²) accessed through an artistic underground corridor, naturally temperature-regulated by sun and earth, each opening onto a private terrace with views across the Ardèche mountains to Mont Ventoux and the Oisans. The big draw is the attached three-Michelin-star Restaurant Marcon, where Régis, Jacques, and Paul Marcon (Bocuse d'Or 2025) cook some of France's most celebrated seasonal, terroir-driven food — mushrooms in autumn, lamb in spring, mountain herbs all year. But the hotel is genuinely worth staying in for its own sake: EU Ecolabel certified, salt-treated pool for guests only, complimentary access to the family's Les Sources du Haut Plateau spa next door.
