Hotel Sahrai sits on a hill between Fez's medina and Ville Nouvelle, built on the former site of Marshal Lyautey's summer palace. Designed by acclaimed French architect and designer Christophe Pillet, it's a 50-room boutique property that pulls off the neat trick of feeling genuinely modern without abandoning the city it's in — Taza stonework, zellige pools, Fassi ceramics, and copper lanterns ground it firmly in Morocco. The name means 'magic' in Moroccan Arabic, and the rooftop at sunset over the ancient medina is about as close to that as a hotel gets.
