IL Tornabuoni sits inside the Palazzo Minerbetti — a 13th-century building that once hosted Cosimo de' Medici III — on Florence's most glamorous pedestrian shopping street. Hyatt's Unbound Collection took it over in late 2021 and handled it well: original frescoes and marble remain intact while 62 rooms got bold gem-tone wallpapers, parquet floors, and midcentury-inspired furniture that feels fresh rather than fussy. No pool, no full spa — but the rooftop Butterfly Terrace and the location right between Ponte Vecchio and the Uffizi make up for a lot.
