Why It Matters

The building itself is the story — a UNESCO World Heritage site classified historic monument on Lyon's Presqu'île, with the 32-meter Soufflot dome serving as the hotel bar. Le Dôme won Best Hotel Bar in the World at the Villégiature Awards. And being in Lyon, France's undisputed food capital, puts real pressure on the kitchen — pressure Chef Mathieu Charrois at Epona appears to be meeting.

A former hospital that has served Lyon since the Middle Ages, the Grand Hôtel-Dieu reopened as a hotel in 2019 after one of France's largest private restorations of a classified historic site. Its 144 rooms occupy three floors of a protected 18th-century landmark on the Rhône riverbank. Jean-Philippe Nuel's interiors thread contemporary luxury through monastic stone — the result is genuinely dramatic rather than just historically obligatory. Named France's Leading Hotel in both 2021 and 2022, and home to Le Dôme bar, voted Best Hotel Bar in the World.
