The Kimpton Canary is downtown Santa Barbara's most distinctive hotel, occupying a Spanish Colonial building a block from State Street. The rooftop pool is the only one of its kind on any hotel in the city, and the four-poster canopy beds draped in Italian Frette linens are genuinely worth booking. Finch & Fork, the on-site restaurant, leans hard into Central Coast farm-to-table cooking and is very much worth a visit even if you're not staying.
