Chef Loïc Le Bail's cuisine pulls between Breton seafood traditions and Japanese technique — a genuinely unusual combination that earns the hotel its reputation. The marine spa uses seaweed harvested from the local Roscoff coastline by partner brand Thalion.
Right on the Sainte-Barbe peninsula in Roscoff, this is a 17th-century merchant's stone manor that was literally dismantled and rebuilt brick by brick in 1974 by the Chapalain family — then fused with a sleek, contemporary wing called The Terraces facing Île de Batz. The result is 29 rooms across three distinct zones, a Michelin-starred restaurant (Nori), a marine spa drawing on locally harvested seaweed, and that rare thing: a genuinely dramatic sea position with almost nothing between you and the water.
