Le Domaine de Beaulieu
Quietly confident country estate — heritage architecture meets clean, contemporary interiors. Warm and personal rather than grand or intimidating. Chef-driven, sustainability-focused, and genuinely rooted in its northern French terroir.
Book the Chef's Private Lounge (Salle à Manger du Chef) well in advance — it seats only 4–10 guests and you choose your ingredients from the chef's selection in advance.
Why It Matters
Chef Christophe Dufossé holds two Michelin red stars and a green star — one of the only two-star chefs in Hauts-de-France. The estate runs its own permaculture kitchen garden, orchard, small farm, beehives, and citrus greenhouse, all feeding directly into the kitchen. The hotel earned 2 Michelin Keys in 2024, the first year of the hotel-rating programme.
A 17th-century red-brick château on nine hectares of Pas-de-Calais countryside, taken over in 2021 by chef Christophe Dufossé and his wife Delphine. The old estate bones are intact — moat, parkland, ancient trees — but the spirit is firmly of the moment, with a rust-coloured modern wing housing a two-Michelin-starred restaurant, a 500 m² Sothys spa, and 28 rooms that lean contemporary rather than fussy ancestral. The food is the real reason people make the drive.

The estate grows an unusual collection of citrus varieties in its greenhouse, which contributes to the kitchen. Part of the broader estate grounds to explore.
The estate's permaculture kitchen garden is watered by natural springs and the château moat. Herbs, vegetables, and fruit used daily in the kitchens grow here. Guests can explore freely.
The estate's small farm is open for visits. Rabbits, chickens, donkeys, and sheep live on the property. A genuine working farm element on a luxury estate.
Cooking workshops and ateliers culinaires run by the Domaine team, an extension of the chef-driven philosophy of the estate.
