Le Florida
Contemporary-rustic auberge with cabinet-of-curiosities décor — retro and second-hand furniture, travel souvenirs, fine linen, vintage armchairs. Warm and idiosyncratic rather than slick. The kind of place where the owner pours you Armagnac and tells you which farmer grew your dinner.
Book the restaurant at the same time as your room — it fills up fast on weekends and the kitchen takes no more than 35 covers
Why It Matters
Four-generation family inn since 1935, now carrying a Michelin plate and Gault&Millau 14/20 rating under Chef Marc Abramovici (veteran of Pierre Koffmann's Tante Claire and other three-star kitchens). Recognized by Le Fooding and Ecotable for its short-supply-chain, organic-forward kitchen. The whole property sleeps just a handful of guests — dinner reservations are harder to get than a room.
This is the kind of place that only exists because one person made an improbable decision. Baptiste Ramounéda left his home village (population: 990) to spend 15 years in Parisian fashion, then came back to transform his great-grandmother Angèle's 1935 inn into something genuinely singular. Today, Auberge le Florida is just four rooms above a Michelin-recognized restaurant, inside a classic Gascon stone house ringed by a herb garden and genuinely free-range chickens. Small, focused, and very clear about what it is.
