Why It Matters

The only restaurant in France listed continuously in the Michelin Guide since 1900. Home to one-Michelin-star restaurant Le Georges (starred since 2009). Family-run by the Jallerats since 1968. Also hosts the annual Paulée des Vins de Loire each March — a prestige wine event modelled on the Paulée de Meursault. Holds eco-certifications including Écotable (3 macarons, 4 consecutive years) and is a Maître Restaurateur.

A former post house turned family hotel, Le Grand Monarque has been in the Michelin Guide since 1900 — making it the only restaurant in France to have entered and stayed in continuously. Run by the Jallerat family since 1968, it packs 58 rooms, a Michelin-starred restaurant, a brasserie, a whisky bar and an 850 m² spa into a beautiful 18th-century townhouse right on Place des Épars. The Chartres Cathedral is a 5-minute walk away. Rooms are dressed in Regency-style fabrics: think taffeta, velvet, silk, and damask. Suites are named after Kings of France, rooms after Queens — which sounds fussy on paper but the effect is genuinely warm rather than stuffy.
