Le Hameau de Saparale
Rugged Corsican terroir chic. Granite walls, antique wood floors, exposed beams — not precious about it, just beautifully put-together. The hamlet layout means you eat on the square above the wine cellar, swim in an orange grove, and fall asleep to nothing but maquis air. This is not a resort; it is someone's actual estate that happens to have a very good restaurant.
Ask for a room with a vineyard-facing balcony; not all 16 rooms have them and it makes a real difference at sunset
Why It Matters
One of the few places in southern Corsica where you genuinely feel like you are inside a working wine-producing estate rather than a hotel with a wine label bolted on. The entire hamlet — former schoolhouse, oil mill, gendarmerie — has been converted into accommodation. The estate produces around 300,000 bottles a year from indigenous Corsican grape varieties; the sommelier keeps bottles on site that are not available elsewhere.
Le Hameau de Saparale is a restored 19th-century hamlet sitting inside a working 52-hectare vineyard in the wild Ortolo valley, halfway between Sartène and Bonifacio. Built in 1845 as a self-sufficient village complete with its own post office and gendarmerie, it was brought back to life by winemakers Philippe and Julie Farinelli, who have been quietly restoring the estate since 2007. The hotel opened fully in May 2025, offering 16 rooms and suites in the stone manor house and three fully independent luxury bergeries with private heated pools.
