Why It Matters
One of the few places in France where the Michelin-starred chef also leads you personally on mushroom-foraging walks through the surrounding forest. Franck Quinton showcases more than 70 varieties of mushrooms in his menus. The hotel has held a Michelin star continuously since 1998 — a remarkable run for a rural Norman property.
A former hunting lodge on the edge of the Andaine forest in Normandy's Parc Naturel Régional Normandie-Maine, Le Manoir du Lys is a 4-star hotel run by two intertwined families — the Quintons and the Lebailly-Quintons — who have been here long enough to know every mushroom trail in the forest. The big draw is the Michelin-starred restaurant, which has held its star since 1998 and earned Gault&Millau Gold Normandie in 2026, with Chef Franck Quinton building his entire cuisine around what he can forage or source locally. Rooms range from compact Cosy options in the main manor to elevated stilted Pavillons des Bois set right at the forest edge.

The signature seasonal experience: starts with a visit to the Bagnoles-de-l'Orne market with the chef, then a cooking class using foraged mushrooms, a lunchtime tasting, and then a guided excursion into the Andaine forest with a mycologist who identifies species. Can include a forest picnic set up at a bend in a hiking path.
