Le Palais Paysan — literally 'the peasant palace' — sits on a 7-hectare estate at the foot of the Atlas Mountains, about 30 minutes south of Marrakech. Designed by Philippe Taburiaux and decorated by Ludovic Petit (LUP31), it is the rural counterpart to Talaa 12, Morocco's design-forward medina riad. The architecture is radical and unapologetic: contemporary lines meet rough local materials, and the result is a building that feels grown from the landscape rather than placed on it.

The resident chef — who has cooked for guests including Nicole Kidman — teaches traditional Moroccan cuisine. Tagine-making is the signature class. Book in advance; classes are hands-on and run in the hotel kitchen.
