Le Pré is a tiny 5-room hotel attached to chef Xavier Beaudiment's two-Michelin-star restaurant in Durtol, a quiet commune just west of Clermont-Ferrand at the base of the Auvergne volcanoes. The restaurant is the main event here — Beaudiment forages over 200 wild plants from the surrounding forests and meadows each morning, building seasonal menus around what nature (and local market gardeners) bring that day. The hotel rooms are calm, contemporary, and soundproofed, designed primarily so guests can stay the night rather than drive after a long tasting menu.
