Why It Matters
The restaurant La Côte d'Or held three Michelin stars under Bernard Loiseau (earned 1991) and retains two today. The estate dates to 1875 and hosted Charlie Chaplin, Salvador Dalí, Picasso, Hemingway, and Edith Piaf. The Salle Dumaine — named for legendary 1930s chef Alexandre Dumaine — is classified as a Historic Monument. The spa (Loiseau des Sens), opened 2017, has won three awards and spans 1,500 m².
Le Relais Bernard Loiseau is one of the most storied gastronomic addresses in France — a five-star Relais & Châteaux property in the small Burgundy town of Saulieu, built around a 2-Michelin-star restaurant and a 1,500 m² spa. The house has been a pilgrimage site for food lovers since Bernard Loiseau elevated it to three-star glory in 1991. Today, chef Louis-Philippe Vigilant carries the Loiseau culinary signature forward, and the family — led by wife Dominique and daughter Bérangère — keeps the whole institution running with fierce pride. The dining room (La Côte d'Or) is the main event, but the spa, the park garden, and 34 genuinely spacious rooms make this a full-stay destination, not just a dinner stopover.
