Why It Matters
The Michelin Guide describes it as the only place in Aigues-Mortes worthy of Hemingway's characters. All 14 rooms are individually decorated with exposed stone and freestanding tubs directly in the bedroom. The ECLAE spa uses algae-based cosmetics harvested from the local Camargue salt flats. No other hotel in town comes close on quality.
A former 18th-century military barracks — once a garrison, police station, and prison — turned 5-star boutique hotel by owners Cécile and Stéphane Rives. Opened in 2018, it sits directly inside the medieval walls of Aigues-Mortes, facing the 13th-century Tower of Constance. Deluxe Room
Steps up with the addition of a private terrace — rare luxury in a medieval town where outdoor space is at a premium. Same stone-and-contemporary aesthetic, freestanding bathtub in the room, high ceilings.
Standard Room
The entry-level category, but don't underestimate it. Stone walls, ceiling heights between 3.30 and 4 metres, a freestanding bathtub in the bedroom (no partition), walk-in shower, and all the expected 5-star fixtures. Views of the ramparts.
Suite
The showstopper rooms. Stately fireplaces, a freestanding bathtub set in an alcove, a separate seating area, and the best views — either directly over the Tour de Constance or the historic ramparts. Some suites accommodate a child via a sofa bed. Bathrooms have two washbasins and a separate toilet.
Superior Room
More floor area than the Standard, with the same dramatic stone interiors. Guests consistently note how much bigger these feel in person than photos suggest. Direct views of the battlements.
