Lilianfels is a 5-star resort set on two acres of manicured gardens adjacent to Echo Point in Katoomba, right alongside the iconic Three Sisters. Originally built in 1889 as a summer escape for Sir Frederick Darley — the sixth Chief Justice of New South Wales — the property has heritage bones and recently renovated rooms. Just 90 minutes from Sydney, it punches above its weight on dining, with multi-hatted Darley's Restaurant in the original homestead and the fun, bold Miss Lilian doing Southeast Asian street food with real personality.
