A 1540 farmstead turned 20-room eco-luxury boutique hotel on the Chianti Classico hills, about 6 km outside Castellina in Chianti. The bones of the original building survived: vaulted ceilings, terracotta floors, exposed stone patios and antique furnishings. The renovation layered in Technogym equipment, Comfort Zone spa products and Smart TVs without scrubbing out the history. Chef Guido Haverkock runs Tavola di Guido restaurant, sourcing fruit, vegetables, eggs, honey and olive oil from the hotel's own organic farm just 3 km down the road.
