Why It Matters

One of very few hotels in Italy where the on-site winemaking family has been cultivating these exact vines for four generations. The restaurant is run by chef Matteo Nogarole and is open to non-guests — it's genuinely worth a dinner even if you're not sleeping here.

A 15-room boutique hotel inside a restored 16th-century noble villa in the Illasi Valley, about 25 minutes east of Verona. Thick stone walls, arched corridors, and a sunlit courtyard are the bones — the Pellegrino and Fasoli families have layered on contemporary design without sanding off the history. The Fasoli side of the family have been making wine here since 1925, and that winery (Fasoli Gino) is literally 800 metres down the road. Wine isn't an add-on; it's the whole point of the place.
