Why It Matters
Michelin Guide and Tablet Hotels listed. Just three rooms means near-total privacy. The chef pedigree is real — Michelin-starred background, on-site vegetable garden, hyper-local sourcing. Only property in Béziers sitting directly on the Canal du Midi (UNESCO World Heritage) with a serious restaurant attached. Gault & Millau recognized.
Three rooms, one resident chef, and a late 19th-century folly on the banks of the Canal du Midi. That's the whole pitch — and it's enough. Maison Jullian opened in 2023 after a 7-month renovation, run by Candy Miller (French-British, former Parisian concept store owner) and chef Charles Teboul, whose 30-year Paris career included a stint as executive chef at the Michelin-starred Hôtel Scribe. The building itself is a folie biterroise — a petite urban château built around 1890 by Martien Jullian, vineyard owner and wine merchant. The three rooms are named after his wife and daughters.

A 2000m² English-style garden with wisteria, bougainvillea, mimosa, sage, rosemary, and lavender planted among old magnolia and linden trees. Antique greenhouse with Eiffel-style iron structures and small stained glass windows. A genuinely peaceful spot right on the canal towpath.
Chef Charles Teboul's team offers off-site catering. Chef at home from €700 (meal included); cocktail service at €40/person; aperitif box (4–5 people) at €35; birthday cakes at €6/person. Free delivery from €150 within 10km of Béziers.
A 10m × 4m outdoor pool set within lush vegetation in the 2000m² English-style garden. Deckchairs, parasols, bathrobes, towels, and single-use flip-flops provided. Available to hotel guests and also to day visitors via paid pool packages. Seasonal (summer months).
