Nun Assisi Relais
Monastic minimalism meets contemporary Italian design. Silence is the point. No lobby music, no resort programming. The atmosphere is deliberately slow — stone floors, leather armchairs, linen curtains, the kind of place that earns its five stars through restraint rather than excess.
Ask for Privilege Suite 10 specifically — it has a full 1612 fresco covering the walls, essentially sleeping inside a museum
Why It Matters
The underground Roman Spa is genuinely one-of-a-kind: a working thermal circuit set directly within limestone pillars and masonry from the 1st-century AD city of Asisium, discovered intact during the 2007 restoration. The hotel sits in a UNESCO World Heritage city and was carved from a 750-year-old monastery without erasing what was already there.
A 5-star relais inside the monastery of Santa Caterina, built in 1275 for a community of Benedictine nuns. Eighteen suites, no two alike, shaped from the original monastic cells — exposed stone, vaulted ceilings, ancient wooden beams. Beneath it all, a Roman spa running through ruins from the 2nd century BC. The Basilica di San Francesco is a 15-minute walk away.

How you'll actually spend your days.
The Roman Spa is open to non-hotel guests as a day experience. Full thermal circuit access through Tepidarium, Calidarium, Sudatorium, Frigidarium, Jacuzzi, multi-jet pool, and tisaneria.
One hour of practice in the cloister garden, guided by a dedicated instructor. Surrounded by the ancient monastery walls, rosemary, and silence.
Private visit to a historic Umbrian cellar. The owner shares stories of harvests and terroir while guests taste rare vintages straight from the barrel — Sagrantino and great Umbrian reds.
A private guide leads through hidden alleys, artisan workshops, and off-the-beaten-path corners of the city. From the Basilica to the secret gardens.
Dawn through the oak woods with the hotel's truffle hunter and his lagotti dogs. After the search, a private lunch is prepared in front of guests, with each dish built around the truffle just found.
Knead pasta, learn recipes passed down through generations with a local chef in the hotel kitchen. Dinner with what you've made, paired with Umbrian wines.
