Op Oost is a 12-suite, adults-only boutique hotel in an 18th-century farmhouse and restored seaweed barn on the eastern edge of Texel, just 150 metres from the Wadden Sea. The place is run by Valerie Jongeneel and chef Joram Timmerman — she handles the eco-conscious hospitality, he runs a Michelin Green Star restaurant that grows, forages, and ferments almost everything within arm's reach. Farm chic meets Nordic philosophy: COCOMAT mattresses, vegan homemade cosmetics, free-range chickens roaming the grounds, and a tasting menu that maps the ecosystems of the island.
